I found a poem about less is more which I find can really relate to simplicity.
Who strive - you don't know how the others strive
To paint a little thing like that you smeared
Carelessly passing with your robes afloat,-

An architect Ludwig Mies van der Rohe adopted the motto "Less is more" showing a building to create an impression of extreme simplicity. This would be good to get a quote more from his interviews.
